Oven Runs Hot or Cold: Testing and Calibrating the Temperature
Ovens are less accurate than people assume. A drift of 25 °F is common, and even a healthy oven cycles across a range of 30–50 °F around its set point as the element switches on and off. That is normal operation, not a fault.
What is not normal is a consistent offset — everything browning too fast, or cakes never setting.
Measure it properly
You need an oven thermometer, not the built-in display.
- Hang or stand the thermometer in the centre of the middle rack, away from walls and the element.
- Set the oven to 350 °F (175 °C).
- Wait 20 minutes after the preheat light goes out. This is the step that makes the test valid — the air reaches temperature long before the oven’s mass does, and readings taken at the preheat beep are meaningless.
- Read it, then take four more readings 5 minutes apart.
- Average the readings. You are looking for the mean, not the extremes, because the cycling is expected.

Calibrating it
Digital ovens almost all have a user offset, typically ±35 °F. The procedure varies by manufacturer — commonly holding the Bake button for several seconds until an offset value appears, then adjusting with the arrows. It is in the manual, and the manual is online for any oven made in the last twenty years.
Older analogue ovens have a calibration screw or a movable dial on the back of the thermostat knob. Pull the knob off; there is often a small screw or a notched plate with markings. Small adjustments — the whole range is usually about 50 °F.
Re-measure after calibrating. Do not adjust twice in one session based on a single reading.
When it is the sensor
Electric ovens use a resistance temperature sensor — a thin metal probe protruding into the cavity, usually top left.
You can test it: unplug the oven, disconnect the sensor, and measure resistance. Most read about 1,080 ohms at room temperature (this is the common RTD spec; check yours). Significantly off, or open circuit, means replacement. It is an inexpensive part and usually two screws and a connector.
Gas ovens more often use a bulb-and-capillary thermostat, where the bulb is a sealed tube. If it has lost its charge, the whole thermostat is replaced.
Symptoms that are not calibration
Uneven browning, one side darker — this is normal in most ovens and is why recipes say to rotate trays. If it is severe, check the door seal and whether the oven is level.
Food burning on the bottom — usually the rack position or a dark metal pan, not the thermostat. Try the middle rack and a lighter pan before adjusting anything.
Long preheat and weak browning — a failing element (look for a break or blistering in the coil), or a door seal letting heat out.
Temperature climbing far past the set point — stop using it. A shorted element or a failed relay can keep heating with no control, and that is a fire risk, not an accuracy problem.
Convection changes the numbers
A convection fan moves air and increases heat transfer, so food cooks faster at the same set temperature. Most guidance is to reduce the temperature by 25 °F when converting a conventional recipe. Some ovens do this automatically in convection mode and some do not — worth checking, because it looks exactly like a calibration error if you do not know which yours does.
Do this before you replace an oven
A great many “the oven is broken” conclusions are a $12 thermometer and a calibration offset away from being solved. Measure first.
Choosing a thermometer
The measurement is only as good as the instrument.
Bi-metal dial oven thermometers are cheap and adequate, but many are ±25 °F from new — which is the same order as the error you are trying to measure. If you use one, check it in boiling water first: it should read 212 °F at sea level (lower at altitude, roughly 1 °F per 500 ft).
Digital probe thermometers with an oven-safe lead are more accurate and let you read without opening the door, which matters because opening it drops the air temperature by 50 °F or more and invalidates the reading.
Thermocouple instruments are what a service engineer uses, and they are worth it only if you are calibrating several ovens.
Where in the oven you measure
Ovens are not isothermal, and this is normal:
- The rear is usually hotter than the front, because that is where the door seal loses heat.
- The top is hotter than the bottom in a conventional oven.
- Near the element is much hotter during a heating cycle.
Measure in the centre of the middle rack for the calibration figure. If you also want a map, take readings at four corners on one rack — differences of 25–30 °F across a rack are typical and are what rotating trays exists for. A difference of 75 °F or more suggests a failing element or a fan not running.
Element and fan checks
Bake element — with the oven cold and unplugged, look for a break, a blister, or a bright spot where the coil has thinned. Test continuity: a healthy element reads roughly 15–40 ohms. Open circuit means replacement, and it is usually two screws and a plug at the back of the cavity.
Broil element — same test. An oven that broils but does not bake, or the reverse, has one dead element and the diagnosis is done.
Convection fan — should run whenever convection mode is selected. A fan that does not run makes convection mode behave like a slow conventional oven.
Door seal — run a hand around the closed door for escaping heat, and inspect the gasket for gaps, hardening, or tears. A leaking seal costs you both accuracy and time, and gaskets are inexpensive.
Gas-specific issues
Gas ovens cycle more coarsely than electric and swing more widely around the set point. That is inherent, not a fault.
Two things to look at if the temperature is wrong:
- Flame appearance. A gas oven burner should burn blue with defined cones. Yellow, lazy, or lifting flames mean an air-shutter or supply problem, and they produce soot and carbon monoxide.
- The safety valve and igniter. A weak igniter draws insufficient current to open the valve fully, giving long preheats and weak heating. This is the most common gas oven fault, and it is a serviceable part.
Anything involving the gas valve, the supply, or a flame that will not burn cleanly goes to a qualified engineer.
When to replace instead
Weigh a repair against the appliance’s age and value: a heating element or a thermistor is worth fixing on almost any oven. A control board on a fifteen-year old built-in often costs more than the remaining life justifies, and boards for discontinued models can be unobtainable.
Before concluding any of that, do the measurement properly and try the offset. It is remarkable how often “the oven is broken” is a 30 °F drift and a two-minute adjustment.
